Curried Beef Kebabs

Curried Beef Kebabs is a modern British recipe for a classic dish of cubed beef marinated in a curry-flavoured sauce that's threaded onto skewers with vegetables and barbecued as it's brushed with the marinade. Ingredients:

160ml olive oil (or vegetable oil)
120ml beef stock
120ml lemon juice
2 garlic cloves, finely minced
2 tsp (heaped) curry powder
2 tsp sea salt
4 bay leaves
16 whole black peppercorns
900g beef, cut into 3cm cubes
2 large green bell peppers, cut into wedges
3 medium tomatoes, cut into wedges
3 medium onions, cut into wedges

Method:

Combine the olive oil, beef stock, lemon juice, garlic, curry powder, sea salt, bayleaves and black peppercorns in a shallow dish. Stir thoroughly to combine then remove 150ml of the liquid (reserve this for basting). Add the beef and stir to coat with the marinade then cover the dish and refrigerate for eight hours, or over night.

Pre-heat your barbecue and when ready to cook, drain the marinade and thread the beef, green bell peppers, tomatoes and onions onto skewers (alternate the ingredients, and if using wooden skewers soak these in water beforehand). When the barbecue is hot add the skewers and cook for 3 minutes per side. Baste with the reserved marinade then continue cooking, turning frequently and basting for about 10 minutes, or until the meat is done to your liking. This recipe can also be cooked under a grill (broiler).
