Cucumber-based side dishes are very common in Bhutanese cuisine as they serve as a soothing antidote to chilli-laden main courses. The addition of milk products such as cheese helps remove the heat of the chillies from the palate so you get the cooling effect of the cucumber and the soothing effect of soft cheese.

Ingredients:

180g cucumber (preferably seedless), coarsely chopped
1 red onion, finely diced
90g farmer cheese, crumbled
1 fresh green chilli, de-seeded and finely diced
salt and freshly-ground black pepper, to taste

Method:

Combine all the ingredients in a bowl then cover and set aside in the refrigerator to chill for at least 2 hours before serving.

Once chilled, toss the ingredients to combine then serve.
