This is a classic glaze that can be used for hams and white meats or when finishing corned beef.

Ingredients:

250ml Coca-Cola Classic
60ml lime juice (about 2 limes)
400g dark or light brown sugar
2 medium jalapeño chillies, cut crosswise into 6mm slices (bias cut)

Method:

Combine all the ingredients in a small non-reactive saucepan and slowly bring to a boil. Increase the heat to high then reduce to a simmer and continue cooking until the mixture becomes syrupy and reduces to about 320ml (About 6 minutes). Take off the heat and use to baste.

Note that, as the glaze cools it will thicken appreciably. It is much easier to use if you re-heat for about 1 minute immediately before use.
