Cream the sugar and butter for the base together until pale and creamy. Add the dry ingredients and mix-in thoroughly then use to line the base of a square slice tin. Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for 15 minutes. Meanwhile mix all the ingredients for the topping together and place over the top of the hot base.
Place back in the oven and cook for a further 5 minutes. Bring out of the oven, allow to sit for 10 minutes to cool then cut whilst still warm.
