Chilli Jam
Chilli Jam is a traditional South African recipe for a classic jam made from a blend of chillies and white onions in a sugar syrup base flavoured with lemon that makes an excellent breakfast spread or condiment. I love my chilli jams and chilli marmalades. This version comes from South Africa, and as well as being an excellent relish or addition to sauces it also makes a great spread for your toast or even pancakes at breakfast time.
Ingredients:
200g cayenne chillies (red ones are best)
200g onions, quartered
200g white sugar
125ml water
salt, to taste
1 tsp cayenne pepper
1 small lemon, quartered
Method:
Combine the chillies and onion in a food processor and pulse until they are finely chopped (but do not purée). Scrape the chilli and onion mixture into a medium-sized saucepan and mix with the sugar, water, salt, cayenne pepper and lemon.
Bring to a boil, reduce to a simmer and cook, uncovered, for 10 minutes, or until the sauce is thick. Take off the heat, squeeze and then discard the lemon quarters.
Pour into jam jars that have been washed, cleaned thoroughly and warmed in an oven heated to 70°C for 40 minutes. Seal securely with lids then allow to cool completely.
This jam will keep in the refrigerator for up to 1 month.
