Chilli Hot Devil Pork

This is a Sri Lankan twist on the classic British devil sauce concept.

Ingredients:

1kg boneless pork (chose a less fatty cut), meat cut into 3cm (1 in) pieces
1/2 tsp freshly-ground black pepper
4 tbsp coconut or cider vinegar
1 1/2 tbsp dark soy sauce
1/2 tsp sugar
2 large onions, cut into 1cm (1/2 in pieces)
2 large tomatoes, cubed
20g chillies, pounded to a paste
6 garlic cloves
1 1/2 tbsp dried chillies, crushed in a mortar
1 1/2 tbsp toasted curry powder
3 cloves
3 green cardamom pods
6 curry leaves

Method:

Combine the black pepper, vinegar, soy sauce and sugar in a bowl. Mix well then toss in the pork pieces. Cover and set aside to marinate for at least 45 minutes.

After this time, transfer the pork to a lidded pan over medium heat. Continue cooking until the meat has released its juices and these have thickened down to an oily gravy (about 20 minutes). Adjust the seasoning to taste then add all the remaining ingredients. Shallow fry the spices to cook until no longer raw (about 5 minutes). Continue cooking for about 5 minutes more until the tomatoes have broken down into a sauce.

A few minutes before serving add a little shredded lemongrass.

Serve accompanied by rice, bread, rotis or hoppers. An excellent way of serving would be to accompany with Sri Lankan style lentils and poppadoms.
