Cheddar Chilli Cheesecake

Cheddar Chilli Cheesecake is a traditional American recipe for a classic savoury cheesecake of Cheddar cheese, cream cheese and ham flavoured with spring onions and jalapeño chilli that's oven baked on a very thin breadcrumb and cheddar cheese crumbs. Ingredients:

1 1/2 tbsp butter
35g breadcrumbs
35g Cheddar cheese, finely grated
180g ham, thinly sliced
675g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
340g mature Cheddar cheese, grated
240g cottage cheese
105g spring onions, chopped
4 eggs
3 tbsp jalapeño chilli, finely chopped
2 tbsp milk
1 garlic clove, halved

Method:

Use the 1 1/2 tbsp butter to grease a 22cm springform cake tin then set aside.

Mix the breadcrumbs and the finely-grated Cheddar cheese and sprinkle this into the base of the pan, turning to coat. Transfer to a refrigerator and chill for at least 30 minutes.

Dice about half the ham (but reserve the remainder as slices). Combine the diced ham with all the remaining ingredients in a blender or food processor and pulse until smooth. Pour just over half of this mixture into the prepared pan then top with the remaining ham slices and cover with the remainder of the filling. Place the pan on a baking sheet then transfer to an oven pre-heated to 160°C and bake for 75 minutes.

Turn the oven off and allow the cheesecake to cool naturally in the oven with the door ajar for about 1 hour. Transfer the cheesecake to a wire rack then remove the sides of the pan and allow to cool completely to room temperature before serving.
