Ingredients:

1kg chanterelle mushrooms, wiped clean
1kg shiitake mushrooms, wiped clean and de-stemmed
700ml passata (tomato juice)
700ml orange juice
350g dried black beans
1 bunch fresh thyme
60ml groundnut oil
2 large onions, diced
8 garlic cloves, minced
2 large green bell peppers, diced
2 ancho chillies, minced
1 chipotle chilli, minced
1 habanero chilli, minced
15 plum tomatoes, de-seeded and quartered
300g fresh sweetcorn (cut from the cob) [optional]
1 bunch spring onions, chopped
3 tbsp freshly toasted and ground cumin seeds
3 tbsp dried oregano
1 1/2 tbsp fresh thyme leaves, chopped
300g sour cherries

Method:

Add the tomato and lemon juices to a pan, bring to a boil then add the thyme and beans. Reduce to a simmer, cover and cook for 90 minutes, or until the beans are nicely tender.

Meanwhile heat half the oil in a pan, add the onions and garlic and fry until browned before adding the bell pepper, chillies tomatoes. Bring to a simmer and cook for 20 minutes before adding the cumin, spring onions, oregano and thyme leaves. Add the bean mixture and simmer to incorporate.

Add the remaining oil to another pan and heat until smoking before using this to fry the mushrooms. Fry for 5 minutes then add to the chilli bean mixture. Stir well, simmer gently for 20 minutes then stir-in the wild cherries and serve.
