Ingredients:
1 bottle Champagne, Cava or sparkling wine
1l ginger ale
180ml vodka
250ml apricot brandy
4 apricots (or peaches), pitted and sliced into segments
Method:
Combine the vodka and apricot brandy in a pitcher with the apricots. Chill for at least 2 hours then add the ginger ale and champagne just before serving. Pour into glasses with ice.
