Caril de Marisco (Seafood Curry)

Ingredients:

1kg cooked seafood (crab, prawns, cuttlefish, squid, langoustine etc)
250g onions, chopped
500g tomatoes, crushed
400ml coconut milk
salt, to taste
1 tbsp curry powder (or to taste)
chillies, pounded to a paste, to taste
garlic, minced, to taste
olive oil

Method:

Heat about 6 tbsp olive oil in a pan. Add the olive oil and use to fry the onion for about 5 minutes, or until lightly browned.

Stir in the seafood (cut the pieces into the same size as the prawns) along with the tomatoes, curry powder, garlic and chilli paste.

Bring the mixture to a simmer and cook for about 20 minutes, or until the tomatoes have broken down to a sauce. At this point stir in the coconut milk and cook gently (take care the coconut milk does not curdle).

Season lightly with salt and serve hot, accompanied by rice.
