The most desired prawns (shrimp) in Guinea-Bissau are the carabineiros (Cardinal Prawns/Crevette Imperiale) which have a bright red colour when cooked and a much meatier flavour than normal prawns. They are typically cooked whole and the contents of the head are held to be a delicacy.

Ingredients:

16 carabineiros (cardinal) prawns, whole
2 piri-piri chillies
1 garlic clove
8 tbsp oil
salt and freshly-ground black pepper, to taste

Method:

Pound together the chillies, garlic and oil in a mortar to create a smooth paste.

Pre-heat you barbecue or grill.

Brush the prawns with the spiced oil and season liberally with salt and black pepper.

Place on your grill and cook for about 4 minutes per side, until cooked through and bright red, brushing with the leftover oil as you cook.
