Masalas are a pre-prepared spice blend. Indian traders and settlers brought the concept to Malaysia and Malay workers brought the concept to South Africa. They can either be dry masalas, intended for long-term storage or they can be 'fresh' masalas, as presented here. This is commonly known as 'red' masala due to the colouring provided by the red chillies.

Ingredients


100g red chillies, stems removed
80g garlic and ginger paste
2 tbsp herbed salt
3 tbsp sunflower oil
1/2 tsp ground turmeric
3 tbsp water
4 tsp additional sunflower oil

Method:

Place all ingredients except the additional sunflower oil in a blender and process until smooth. Bottle, cover with the additional oil and store in the refrigerator until needed.

The oil poured over the top will prevent the masala from both discolouring through oxidation and from going off.
