Ingredients:
300g prawns
3 garlic cloves
2 red chillies (or to taste), chopped
3 tbsp extra-virgin olive oil
salt and freshly-ground black pepper, to taste
Method:
Peel the prawns then peel the garlic and cut into very thin slices. Heat the oil in a clay pot (or flame-proof casserole) then add the garlic and chilli and fry until the garlic is well browned. Add the prawns at this point and season to taste.
Stir with a wooden spoon and when the prawns begin to change colour take off the heat and stir once more (the prawns will finish cooking from the heat of the pan). Serve hot.
