Caldo de Papas y Cilantro (Potato and Coriander Soup)
Caldo de Papas y Cilantro (Potato and Coriander Soup) is a traditional Spanish recipe (from the Canary Islands) for a classic soup of potatoes and onions with coriander that's finished with the addion of poached eggs. Ingredients:
1kg potatoes
1 onion
2 tomatoes, blanched, peeled and de-seeded
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
4 eggs
4 sprigs coriander
salt
250ml oil
pinch of saffron
Method:
Peel and chop the potatoes and onions. Combine in a pan with the bell peppers, tomatoes, oil, saffron and coriander. Cover with water and bring to a boil. Reduce to a simmer and cook for about 30 minutes, or until the potatoes are tender.
Season to taste then crack the eggs into the soup and leave for a few minutes, or until poached and set. Ladle into warmed soup bowls and serve.
