Ingredients:
1kg minced pork
2 large onions, chopped
4 garlic cloves, minced
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
3 celery sticks, chopped
900g tomatoes
900g cooked red kidney beans
1/4 tsp hot chilli flakes
dash of Cajun Hot Sauce
1 tsp dried oregano (or cumin)
1/4 tsp cayenne pepper
salt and black pepper to taste
Method:
Place the pork in a large pan and cook over medium heat for about 5 minutes, or until browned. Pour-off any excess fat then add the onions and cook until tender. Now add the garlic, peppers and celery. Cook for a further 5 minutes, with occasional stirring until all the vegetables have softened.
Now add the tomatoes, breaking them up with the back of a spoon. Stir-in the kidney beans, hot chilli flakes, oregano, cayenne pepper, hot pepper sauce and add salt and pepper to taste. Bring to a boil then reduce the heat to a simmer and cook for 20 minutes.
