This is a traditional Cajun (Louisiana-based) blend for spices used in the preparation of blackened fish or meat.

Ingredients:

1 tbsp black peppercorns
12 tbsp Cayenne Pepper
1 tbsp White cumin seeds
1 tbsp Black mustard seeds
1 tbsp dried oregano, crumbled
1 tbsp Paprika
1 1/2 tbsp Crushed, dried, red chillies
Sea Salt, to taste
1 tbsp dried Thyme
1 tbsp powdered sassafras

Method:

Mix the ingredients in a pestle and mortar or a mechanical grinder and prepare into a medium powder.

The powder will store for several months if sealed in a jar and kept in a cool, dark, cupboard.
