Here is a classic turkey leftovers dish from America that can also be used for any leftover stuffing that you might have.
Bundt-baked Turkey: A American recipe for a dish of leftover turkey and stuffing baked in a custard base that is an excellent way of making use of leftover Christmas or Thanksgiving turkey.
Ingredients:
350g dry stuffing, cubed (or dry bread, cubed)
350g cooked turkey, diced
200g cheese, grated
1 small onion, diced and fried in oil until golden
4 eggs, beaten
600ml milk
1/4 tsp freshly-ground black pepper
1 1/2 tsp
Italian herbs
Method:
Arrange 1/3 of the stuffing or bread cubes in the base of a greased tube (bundt) pan.
Scatter the turkey evenly over the bread then spread the grated cheese over the turkey. Sprinkle over the fried onion then scatter over the remaining stuffing or bread cubes.
In a bowl, beat together the eggs with the milk, black pepper and herbs. Pour this mixture over the turkey and stuffing mix then sit the tube pan in a roasting tin half filled with boiling water.
Transfer to an oven pre-heated to 170°C and bake for 60 minutes.
After this time remove the roasting tin and cook the turkey mixture in the bundt pan for a further 10 minutes, or until a skewer inserted into the centre of the mixture emerges cleanly.
Remove from the oven and set aside to cool for 10 minutes.
Now use a plastic spatula to carefully loosen the turkey mixture away from the sides of the pan.
Carefully invert onto a serving dish. Serve immediately.
