Ingredients:

105g salt
105g brown sugar
20 black peppercorns
2 garlic cloves
2 dried chillies, crushed
5 fresh sage leaves
1 large sprig of fresh thyme

1 whole turkey (about 8kg)

Method:

Thaw the turkey thoroughly and remove any giblets then set aside

Add 750ml water to a pan. Add all the brining ingredients then bring to a boil and stir until dissolved. Add your turkey to a large container (a cooler is good) then combine the concentrated brine with about 10l of water and pour over the bird, ensuring that the whole turkey is covered. Keep refrigerated for 12 hours.

After this time rinse and dry the bird then set in the refrigerator for a further 12 hours. Now roast the bird using the traditional roast turkey recipe.
