Boxemännercher (Gingerbread Men)

Boxemännercher (Gingerbread Men) is a traditional Luxembourger recipe for a classic biscuit (cookie) of a yeast leavened sugar, butter, flour and treacle dough flavoured with ginger and spices that's cut into human shapes before baking and which is typically served for St Nicholas' Day (December 6th). This is a traditional treat, typically served on the 6th of December (St Nicholas' Day) to children both young and old.

Ingredients:

360ml black treacle (molasses)
200g brown sugar
160ml cold water
70g butter, softened
900g plain flour
1 packet active, dried, yeast
1 tsp salt
2 tsp ground ginger
1 1/4 tsp ground cloves
1 1/4 tsp ground cinnamon
1/2 tsp freshly-grated nutmeg
1 tbsp milk mixed with an egg yolk, to glaze
chocolate to make eyes and buttons

Method:

Combine the treacle, sugar, water and butter in a saucepan. Heat gently until all the ingredients have melted and the mixture is fluid. Take off the heat and cool to lukewarm.

Combine the flour, salt and spices in a bowl then stir in the yeast. Add the treacle mix and beat together to form a dough. Cover with a damp cloth and set aside in a warm place for about 90 minutes, or until doubled in volume.

Knock the dough back, turn out onto a floured work surface and roll out to about 5mm thick. Cut into gingerbread man shapes then transfer to a lightly-greased work surface. Cover with a damp cloth and set aside for 20 minutes to rise then brush with the egg yolk glaze. Transfer to an oven pre-heated to 180°C and bake for about 12 to 15 minutes, or until cooked through and golden brown.

Remove from the oven and add small pieces of chocolate to form eyes, mouths and buttons. Set aside to cool and serve or store.
