Like the other ABC (Aruba, Bonaire and Curaçao) Islands, Bonaire is not known for its use of fiery chillies in its cuisine and this local green seasoning is no exceptions. Chillies are present, in moderation along with herbs such as basil, coriander, thyme and parsley. The seasoning peppers are effectively mini sweet peppers and you should use a blend of red yellow and green. This green seasoning can be used just as well for a dip as for a seasoning for meat and vegetables.
Ingredients:
4 seasoning peppers (pimento peppers)
5 garlic cloves, peeled
4 spring onions
6 thyme sprigs
1/2 small bunch coriander
1/2 small bunch flat-leaf parsley
4 basil sprigs
3 thin slices of ginger
200ml neutral-flavoured oil
1 red finger chilli
salt and freshly-ground black pepper, to taste
Method:
Add all the ingredients to a food processor and season to taste with salt and pepper. Blend to the consistency of a salsa verde.
If not using immediately, transfer to an air-tight jar and store in the refrigerator where it will keep for up to 2–3 weeks.
