Binch akara are classic bean fritters that are made throughout West Africa. This version originates in Sierra Leone.

Ingredients:

500g (1 pound) dry black-eyed beans
2 tsp salt
1 small onion, very finely chopped
2 scotch bonnet chillies
500ml (2 cups) oil

Method:

Pour the dry beans in a blender with 250ml (1 cup) of water. Pulse to chop for one minute then scrape the bean pieces into a large bowl and add plenty of water. Stir until skins float. Strain into colander; allow all skin and eyes to flow out.

Drain the beans, then transfer to a food processor with the onion and chillies. Add 500ml (2 cups) water and blend until smooth.

Pour in a bowl, season to taste with salt, and stir with a wooden spoon for two minutes.

Heat the oil until moderately hot. Drop the bean mixture into the by the tablespoon do not over-crowd the pan). Fry until golden brown. Cook for about 3-4 minutes per side then remove with a slotted spoon and drain on absorbent paper.

Small balls can be served with toothpicks.
