Biltong is the traditional Southern African dried meat which makes an excellent starting point for a number of recipes such as this one.

Ingredients:

200g button mushrooms, finely sliced
1 small onion, finely chopped
50g butter
100g Biltong, finely grated
250g cream cheese
250g whipping cream, lightly whipped
watercress, to garnish

Method:

Melt the butter in a frying pan and add the onions. Fry for 1 minute before adding the mushrooms. Continue cooking until the onions are soft then set aside to cool completely. Once cold add the fried onions and all the other ingredients to a food processor.

Blend to a smooth paste, place in ramekins and put in the fridge to set. Serve topped with thin slices of biltong and watercress and accompany with toast.
