Bermuda Curry Powder

Ingredients:

6 tbsp ground turmeric
4 tbsp coriander seeds
3 tbsp fenugreek seeds
4 tbsp cumin seeds
2 tbsp dried fenugreek leaves (methi)
3 tbsp fennel seeds
2 tbsp mustard seeds
2 tbsp chilli powder
1 tbsp allspice berries
1 tbsp ground ginger
1 tbsp sea salt

Method:

Toast the whole spices in a dry frying pan over medium heat. Toast for about 90 seconds, stirring constantly, until aromatic but not burned. Turn out onto a plate and set aside to cool completely.

Combine all the spices and salt in a spice grinder. Render to a fine powder and store in a jar where it will keep for 2 months.
