In Belize, breakfast is often the heartiest meal of the day and this is a meal served just about everywhere throughout the country. This dish will typically set you back $2 (including the coffee) and really does set you up for the whole day.

Ingredients:

4 eggs
oil for frying
2 Fry Jacks per person
4 portions Belizean Chicken Stew or Belizean Baked Chicken
3 tbsp refried beans per person

Method:

Prepare the refried beans, Belizean Chicken Stew or Belizean Baked Chicken and Fry Jacks according to their recipes. When almost ready heat the oil in a large frying pan and use to fry the eggs.

To serve, arrange 1 fried egg, 1 piece of chicken, 3 tsp refried beans and 2 fry jacks on a plate. Serve with black coffee.
