Place the steaks onto a chopping board and using a sharp knife cut a pocket into the side of each steak.
For the stuffing, melt the butter in a frying pan, add the garlic and fry for about 1 minute. Now add the mushrooms to the pan and fry gently for about 5 minutes, or until just tender. Stir in the parsley and take off the heat.
Divide the mushroom mixture into four equal portions and insert a portion of this into each steak pocket. Seal the pockets closed with toothpicks.
Set the steaks on the oiled rack of a barbecue over hot coals. Sear the meat over the hottest part of the barbecue for 2 minutes per side, then move the steaks to an area with less intense heat (or lift the rack upwards) and continue cooking for about 4 to 10 minutes more per side (depending on how you like your meat cooked).
Transfer the steaks to warmed serving plates and remove the cocktail sticks. Accompany with salad leaves, cherry tomatoes and the remaining mushrooms.
