Beef with Paprika and Potatoes: An Irish recipe for a stew of beef and potatoes in a spiced tomato and stock base flavoured and coloured with paprika that's finished with soured cream.

Ingredients:

675g lean beef, cubed
450g potatoes, peeled and cubed
115g floury potatoes, grated
2 onions, chopped
3 tbsp olive oil
1 red bell pepper, diced
2 tbsp paprika
3 tsp caraway seeds
1 garlic clove, crushed
2 tbsp tomato purée
450ml veal stock or vegetable stock
150ml soured cream
salt and freshly-ground black pepper, to taste

Method:

Heat the oil in a heavy flameproof casserole. Add the onions and fry for about 6 minutes, or until lightly coloured.

Add the beef and grated potatoes and cook for 3 minutes then stir in the red bell pepper, paprika, caraway seeds and garlic. Cook for 1 minute then stir in the tomato purée, stock and seasonings. Bring the mixture just to a simmer then cover the pot and cook for 50 minutes more.

Stir in the cubed potatoes, cover the pot and cook for 30 minutes more, or until the beef and potatoes are tender (if the casserole is too dry at any point add a little more stock or water).

Take off the lid, pour over the soured cream and use a fork to give a marbled effect. Allow to heat through gently and serve.
