Beef Mince and Coriander Soup

This is a classic Chinese soup of beef cooked in chicken stock and finished with spices, coriander and egg whites.

Ingredients:

For the Marinade:
1 tsp sea salt
1 tsp sugar
1 tsp rice wine (or dry sherry)
1 tsp light soy sauce

For the Soup:
225g lean minced (ground) beef
1.7l chicken stock
3 egg whites, lightly beaten
1 tsp salt
freshly-ground black pepper, to taste
1 tbsp fresh ginger, finely chopped
1 tbsp spring onions, finely chopped
5 tbsp fresh coriander (cilantro) leaves, finely chopped

Method:

Begin with the marinade. Combine all the ingredients in a bowl and add the beef. Cover and set aside for the flavours to infuse for 30 minutes.

After this time, bring the chicken stock to a boil in a large pan. Add the beef, stirring constantly to break up any clumps. Bring back to a simmer and cook for 10 minutes.

Now slowly add the egg whites, stirring the soup rapidly as you add them in a slow steady stream (this ensures that the egg whites form fine shreds in the soup base). Season with the salt and black pepper to taste.

To serve, mix together the ginger, spring onions and coriander leaves. Divide the mixture evenly between the bases of your soup bowls. Ladle the soup over the top and serve immediately.
