Bayou Yam Muffins is a traditional American (Louisiana Cajun) recipe for classic cornmeal muffin made with mashed yams (sweet potatoes) and flavoured with coffee. The full recipe is presented here and I hope you enjoy this classic American version of: Bayou Yam Muffins.
Combine the flour, cornmeal, sugar, baking powder, cinnamon and salt together in a large bowl. In a separate bowl combine together the eggs, coffee, butter, yams and Tabasco sauce.
Form a well in the centre of the dry ingredients and add the yam mixture, stirring to combine. Spoon the batter into greased muffin tins, filling the wells no more than 3/4 full. Place in an oven pre-heated to 200°C (400°F/Gas Mark 6) and bake for 20–25 minutes (or until golden brown and set).
Allow to cool for 5 minutes then take the muffins out of the muffin tin. Cool further on a wire rack and serve warm.
