Battered Pepper Shark

If you are wondering what to substitute for the shark in this recipe, then I would recommend our native baby shark, the dogfish, more typically sold in fishmongers as 'rock salmon'. Other cartilaginous fish like skates and rays would also work well.
Ingredients:
1kg boneless shark fillets
200g plain flour
2 tbsp curry powder (eg
Malawi curry powder)
1 tsp hot chilli powder
2 tsp salt
250ml cold water
1 egg, beaten
oil for frying
Method:
Stir together the flour, spices and salt in a bowl until well blended. Take about 70g of this mixture (about 1/2 cup) and place in a plastic bag.
Beat the egg into the remaining flour then work in the water until smooth.
Add oil to a depth of about 3cm in a wok. Place two or three fillets at a time in the bag and shake with the flour. Remove from the bag, shaking off any excess flour mix. Dip the fish in the batter and immediately drop into the hot oil. Fry, turning once, until golden brown all over (about 15 minutes).
Repeat the cooking process with the remaining fish. It's important not to over-crowd the pan during frying or the batter will not be crisp.
Serve hot.
