Maize (corn) is the main carbohydrate staple in East Timor (though rice is also eaten). This is a classic East Timorese vegetarian dish of maize kernels, squash and mung beans that is a staple dish on the island.

Ingredients:

500g corn kernels, preferably freshly cut from the cob
300g dried mung beans
1kg squash (or pumpkin or butternut squash), peeled and cubed
1l water
2 onions , diced
8 garlic cloves, minced
3 tbsp olive oil
Salt and freshly-ground black pepper, to taste

Method:

The night before, soak the mung beans in a large bowl of water.

The following day, drain the mung beans then transfer to a large pan, cover with plenty of water and boil for about 20 minutes.

Meanwhile, fry the onion and garlic in olive oil over medium heat for 6-8 minutes in a separate pan.

Add the water, squash pieces, drained beans and corn kernels to the onion and garlic.

Increase the heat to high and bring to boil. Reduce heat to medium and cook, stirring occasionally, until the squash is tender (about 15 to 20 minutes) until the liquid has almost completely evaporated away.

Season with salt and freshly-ground pepper to taste. Serve with rice.
