Bananes Farci (Stuffed Bananas)

Ingredients:

6 green bananas
250g minced (ground) beef
1 onion, finely chopped
1 egg
Salt and freshly-ground black pepper, to taste
banana leaves, for wrapping

Method:

Add the meat to a frying pan over medium heat. Fry, stirring and breaking up any clumps with a wooden spatula until the meat is nicely coloured and no bits of pink are visible.

Discard any excess fat then turn the meat onto a plate.

Beat the egg in a small bowl.

Slice the bananas in half lengthwise and remove the flesh, taking care not to damage the peels. Mash the banana flesh with a potato masher and then mix with the meat, egg and onion.

Stuff the banana peels with the stuffing mixture and wrap up in banana leaves. Tie securely with string and arrange on a baking tray.

Transfer to the centre of an oven pre-heated to 180C and bake for 45 minutes.

Allow to cool slightly then unwrap and serve.
