Balachaung Gyaw (Fried Dried Shrimp with Chillies) a Classic Myanmar recipe for an accompaniment of dried shrimps in an oil, onion, garlic, fish sauce and chilli flake base.
Ingredients:
180g dried shrimps (ground to a powder with a coffee blender)
160ml groundnut oil
3 onions, sliced
3 garlic cloves, sliced
1 tsp shrimp paste
2 tbsp fish sauce
2 tbsp chilli flakes
Method:
Heat the oil in a wok. Add the onions and fry for about 6 minutes, or until crisp. Remove with a slotted spoon and set aside. Add the garlic to the remaining oil and fry for about 3 minutes, or until crisp. Remove with a slotted spoon and set aside.
Mix the shrimp paste with 1 tbsp water until smooth. Add to the wok and stir-fry over medium heat for 2 minutes. Now stir in the dried shrimp along with the fish sauce and chilli flakes. Fry until the mixture is crisp, fluffy and dry.
Mix with the fried onions and fried garlic and serve as a side dish. As well as being served as a side dish, this can also be served as a starter or snack with bread.
