Baked Chips: An Irish recipe for a home-made version of oven chips (fries) made with potato lengths cooked in a sunflower oil and hot chilli powder base.
Ingredients:
675g large potatoes, scrubbed clean but not peeled, cut lengthways into 1.25cm slices
1 tsp hot chilli powder
1 tbsp sunflower oil
salt, to taste
Method:
Place a large baking tray in an oven pre-heated to 240°C so that it heats up.
Place the cut potato strips in a large bowl and toss with the chilli powder to coat evenly. Sprinkle over the oil and toss the potatoes once again.
Remove the baking tray from the oven and arrange the potato pieces in a single layer on it. Return to the oven and cook for 20 minutes. Turn the potato pieces over, return to the oven and cook for 20 minutes more, or until crisp and evenly browned all over.
Sprinkle with salt and serve immediately as an accompaniment.
