Ingredients:
1 spring onion, chopped
1/2 small onion, chopped
2 garlic cloves, chopped
1 tbsp vegetable oil
3kg chicken, cut into 8 serving pieces (or use chicken portions)
200g guava pulp, chopped
120ml tomato ketchup
1/2 tsp freshly-grated ginger
1 tbsp brown sugar
250ml guava juice
1l water
120ml white cane vinegar
1 1/2 tsp freshly-ground black pepper
dash of Jamaican hot chilli sauce
Method:
Combine the spring onion, onion, garlic and vegetable oil in a bowl. Use this mixture to spread over the chicken then set aside in a shallow dish to marinate for 20 minutes.
Place the chicken on a greased roasting tin then place in an oven pre-heated to 190°C and roast for 40 minutes.
In the meantime, make the guava sauce. Combine the guava pulp, tomato ketchup, ginger, sugar, guava juice, water and vinegar in a pan. Brig to a boil and cook briskly for 15 minutes. Once the sauce has thickened add a dash of hot chilli sauce then pour over the chicken and bake for a further 20 minutes.
Serve hot with rice and peas and accompanied with carrots and string beans.
