The majority of bread in Barbados is sweet. Therefore this traditional roll is aptly named salt bread as it is one of the only bread available on the island that isn’t too sweet. These are also the classic rolls used to prepare Bajan sandwiches.

Ingredients:

800g of white flour
2 tsp of white granulated sugar
1 tsp salt
2 tbsp of vegetable oil
2 packs of active, dried, yeast
625ml of warm water

Method:

Sift half the flour into a large mixing bowl and mix in the salt, sugar and yeast, Slowly add the warm water until the mixture forms a stiff dough. Add more sifted flour until you have a stiff enough dough to knead.

Lightly flour the work surface, knead the dough for 10 minutes until it is smooth and elastic, and then place it in a greased bowl. Now place the bowl in a warm spot for 40-50 minutes until it has doubled in volume. You know the dough is ready when you poke a finger, and the indentation remains.

Pre-heat your oven to 220°C.

Knock the risen dough back then divide into 12 equal portions. Roll each into a fist-size ball, then place on a greased baking tray.

Cover loosely with a cloth then sit in a warm plate to prove for about 40 minutes, or until the dough has doubled in volume.

Remove the cloth then transfer to the centre of your pre-heated oven and bake for 25-30 minutes until the golden brown rolls sound hollow when tapped on their base.

Serve warm split in half and filled. You can also split into four slices and toast these.
