Liula-Kebab (Minced Lamb Kofte) is a traditional Azerbaijani recipe for a classic dish of minced lamb and onions shaped into sausages, threaded on skewers and barbecued or grilled (broiled). Ingredients:
900g lean, minced, lamb
45g finely-chopped onions
2 tsp salt
freshly-ground black pepper, to taste
6 tbsp finely-shredded mint leaves
8 spring onions, finely shredded
Method:
Combine the minced lamb, onions, salt, black pepper and mint in a large bowl. Mix with your hands to combine thoroughly then take portions of the mixture and form into sausage shapes about 10cm long and 5cm thick. Gently thread these onto four wooden skewers, leaving about 1cm between each.
Cook on a pre-heated barbecue or under a grill (broiler), turning frequently and cooking until the meat is golden brown and done to taste. Typically, cooking the koftes pink will take about 10 minutes and well done will take about 15 minutes.
When done, carefully slide the koftes onto a serving plate and garnish with the shredded spring onions before serving.
