Atún con Pimientos y Tomate (Tuna with Chillies and Tomatoes): A Spanish recipe for a dish of tuna steaks stuffed with bacon and garlic forcemeat that are cooked in a tomato, white wine and chilli sauce.

Ingredients


4 tuna steaks
1kg ripe tomatoes
7 small green chillies
10 black peppercorns
5 garlic cloves
4 whole cloves
250ml olive oil
a few bay leaves
100g bacon, sliced into strips
1l white wine

Method:

Place the tuna in a bowl, cover with cold water and set aside to soak for 15 minutes. After this time, pound together half the garlic, a few black peppercorns the clove and the bacon in a mortar. Cut a hole in the centre of the tuna steaks and stuff with this mixture.

In a pan, combine the tomatoes, chillies, bayleaves and oil. Bring to a simmer and cook for 5 minutes. Add the tuna and bring back to a simmer. Finally add the wine, bring back to a simmer, cover and cook for about 20 minutes, or until the tuna is tender.

Remove the tuna and the chillies. Spoon half the tomato sauce onto plates, sit the tuna on top and spoon over the remaining tomato sauce. Garnish with the chillies and serve.
