Attiéké et Aloko Poisson (Attieke and Fish Aloko)
Attiéké et Aloko Poisson (Attieke and Fish Aloko) is a traditional Nigerienne recipe (from Niger) for a classic dish of fried fish served on a bed of fried gari with a tomato sauce and served accompanied by fried plantains. Attiéké is the name given in the central band of West Africa (most especially Mali and Niger) to dried cassava meal (known as gari elsewhere in West Africa).
Ingredients:
500g attieke (gari) — this is ground and dried fermented cassava
2 ripe plantains (this is the aloko)
400g fish (bream, mackerel, tilapia), cleaned, scaled and cut into 2 or 3 pieces (depending on the size)
1 large onion, chopped
1 lemon
1 tomato, chopped
2 tsp fresh ginger, grated
2 garlic cloves, peeled and crushed
salt and freshly-ground black pepper, to taste
1/2 Maggi cube
500ml sunflower oil, for frying
1 hot chilli
Method:
Wash the fish with water and then rub with lemon. Rinse and set aside.
For the fish marinade, mix together the Maggi cube, 1 tsp oil, garlic and ginger in a small bowl. Season with salt and black pepper then mix to a paste.
Use this mixture to coat the fish pieces then sit on a plate, cover with clingfilm (plastic wrap) and set aside in the refrigerator to marinate over night.
When ready to cook, heat the sunflower oil in a pan. Peel the plantains and cut into slices. Lightly season with salt then drop into the hot oil and fry the rounds of aloko, turning over half way through, until nicely browned all over. Remove with a slotted spoon and drain on kitchen paper.
Add the fish to the pan and fry until crisp on the outside and cooked through (about 12 minutes).
For the tomato sauce, heat a little oil in a pan, add the chopped onion and fry for about 4 minutes or until soft. Add the tomato pieces and season to taste. Bring to a simmer and cook until the tomatoes have broken down to a sauce. Pound the hot chilli to a paste and stir into the sauce.
Sprinkle a little water over the gari. Place in a microwave-safe bowl and microwave on full power for 4 minutes. Fluff with a fork.
Arrange the cooked gari on a serving dish. Sit the fried fish on top and spoon over the tomato sauce. Garnish with the fried plantain rounds and serve.
