Antiguan Tomato Sauce

Ingredients:

2 x 440g tins chopped plum tomatoes
6 garlic cloves, minced
1/4 habanero chilli, minced
1 tsp dried oregano
1/2 tsp dried thyme
2 allspice leaves (or bay eaves)
1/4 tsp sea salt
black pepper, to taste

Method:

Meanwhile form a sauce by combining the garlic, tomato and basil in a pan and boiling to reduce for 15 minutes.

Take off the heat and allow to cool slightly then remove and discard the allspice leaves. If you like it smooth, process with a stick blender.
