Ingredients:

1kg goat meat, cut into chunks
2 tbsp Antiguan curry powder
1 onion, chopped
3 garlic cloves, minced
1 tsp fresh thyme, chopped
1 tsp ground allspice
1 scotch bonnet chilli, chopped
Salt and freshly-ground black pepper, to taste

Method:

In a large bowl, combine the goat meat, curry powder, onion, garlic, thyme, allspice, and scotch bonnet chilli. Set aside to marinate for at least an hour (but best if left in the refrigerator over night).

When ready to cook, heat a little oil in a large pot over medium heat. Add the marinated goat meat and fry until browned on all sides.

Scrape any leftover marinade into the pan then pour over enough water to just cover the meat. At this point, cover the pot with a lid and simmer for 90 minutes, or until the meat is tender.

Serve the curry goat alongside rice and peas.
