Here is a classic pâté-style dish from the Canary Island that's typically served with bread or toast as a tapa.

Ingredients:

100g Manchego cheese (or other hard cheese)
1 tomato, coarsely chopped
1 garlic clove, finely chopped
1 dried cayenne chilli, crumbled
50ml olive oil
pinch of salt

Method:

Chop the cheese into small cubes.

Add to a mortar with the tomato, chilli and garlic, then pound to a smooth paste.

Add the olive oil and salt, then work all the ingredients together until thoroughly combined.

Turn into a container, cover with clingfilm (plastic wrap) and chill in the refrigerator over night.

This dish will keep in the refrigerator for up to 5 days.
