Alloco de Cameroun (Cameroonian Alloco): A Cameroonian recipe for a dish of snack or accompaniment of plantain slices deep fried in red palm oil.
Ingredients:
1.5kg plantains
1l red palm oil (or groundnut oil)
Method:
Heat the oil in a deep fryer to 180°C.
Peel the plantains and cut into 6mm thick slices. When the oil is hot, add a handful of the plantain slices to the hot oil. Fry, stirring occasionally, until nicely and evenly browned all over.
Remove with a slotted spoon and drain on kitchen paper as you cook the next batch.
Season with salt if serving as a savoury snack or as an accompaniment. Serve dusted with powdered sugar if serving as a sweet snack.
These fried plantain slices are also ideal as an aperitif.
