Al-Motubug (Stuffed Pastry Squares)

Al-Motubug (Stuffed Pastry Squares) is a traditional Saudi Arabian recipe for a classic starter of yeasted pastry squares filled with a mix of leeks, beef, fried pastry and egg that are fried until golden brown. Ingredients:

840g plain flour
1 tsp active, dried, yeast
2 eggs beaten with 120ml corn oil
2 bunches of medium-sized leeks
1 tbsp freshly-ground black pepper
675g minced (ground) beef
water
3 eggs, beaten
salt, to taste
3 onions, finely chopped

Method:

Sift the flour and yeast into a bowl, season with salt then add cold water a little at a time, mixing until you have a soft but pliable dough. Divide the dough into ten equal pieces and knead these thoroughly. Place on a baking tray sprinkled with a little water then set aside in a warm place to rise for at least 1 hour.

In the meantime, place the minced beef in a pan with the onion. Season with the black pepper and salt then cook, stirring constantly, over medium heat until cooked. Take off the heat and set aside until cooled.

Chop the leeks and was thoroughly then drain and blot dry with paper towels before adding to the beef mixture. Now take a piece of dough, dust with flour then roll out, place over the back of your hands and stretch out until it becomes quite thin. Place on your worktop and trim away any uneven edges.

Brush 2 tbsp of the egg and oil mixture over the dough's surface then fold to form small squares. Add 1 tbps oil to a frying pan then place the pastry squares in the pan and fry on both sides until golden brown. Repeat this process with four more of the dough pieces.

With the next piece, repeat the process described above until you reach the folding stage. Place one fried square in the centre of the unfolded piece, cover generously with the minced beef mixture and 3 tbsp of beaten egg. Fold the dough to form a square. Sprinkle the oil and egg mixture over both sides. Fry in 3 tbsp of oil over medium heat until both sides are golden brown. Repeat the process with the remaining dough pieces.

Serve warm.
