Ají de Tamarillo (Ecuadorian Tree Tomato Hot Sauce)
Ají de Tamarillo (Ecuadorian Tree Tomato Hot Sauce) is a traditional Ecuadorian recipe for a classic hot sauce made from chillies in a tamarillo red onion, garlic and herb base. Ingredients:
4 Tamarillos
2 Rocoto (or red jalapeño) chillies (devein and de-seed for a milder effect)
1/2 Small Red Onion, coarsely chopped
1 Garlic clove
2 tbsp black mint leaves (or substitute coriander leaves)
2 tbsp Lemon Juice
Salt, to taste
Method:
Boil the tamarillos for 5 minutes to soften, then peel and remove seeds.
Combine the tamarillos, Rocoto Peppers, Red Onion, Garlic, Fresh black mint (or coriander), and Lemon Juice in a blender. Process until smooth then season to taste with salt.
Chill in the refrigerator for at least an hour before serving.
Store in an airtight glass container in the refrigerator. The sauce will keep for up to 1 week when refrigerated. Stir before each use as ingredients may separate.
