Personally, I think that an air fryer is one of the best ways of cooking a whole chicken. It’s a bit faster, and it almost guarantees moist flesh with crispy skin and much less fat. The disadvantage, typically, is that you can’t cook a large bird. However, it’s great for the typical guinea fowl and the cooking method is the same.
Ingredients:
Medium-sized Whole Chicken (or Guinea Fowl)
1 tbsp Extra Virgin Olive Oil
1 tbsp Italian Seasoning
Salt and freshly-ground black Pepper, to taste
Air Fryer Sage and Onion Stuffing Balls (optional)
Method:
Remove your whole chicken (or guineafowl) from its packaging and tie up the chicken legs. Arrange the chicken breast side down, pour over half the oil and using your hands smoother it over the visible skin. Season with salt, pepper, and Italian seasoning.
Sit the fowl in the air fryer basket, with the breast side down and air fry for 25 minutes at 180C (360F). Do not preheat the air fryer as it will cook the outside of the chicken too quick and you want to keep the meat moist. If making stuffing balls prepare them whilst the chicken is cooking.
When the air fryer beeps, use a fork placed in the cavity of your bird and use this to turn it over so that it’s breast side up. Now add the remaining oil onto any visible skin and season again.
Continue air-frying for a further 20 minutes. If making stuffing balls air-fry them, with the whole bird in the gaps in the air-fryer basket for the last 10 minutes.
Allow to rest before carving and serving your bird.
