My mother always made sage and onion stuffing with roast fowl and roast pork. Hers was always vegetarian, using breadcrumbs and made the day before. I tend to add some pork sausage meat to mine. My wife doesn’t like pork so I use chicken or mutton for here. Here I’m presenting the pork-based version (you can use sausage meat or skin some sausages) but you can substitute any sausage meat you like (even vegetarian).
Ingredients:
300g (2/3 lb) Sausage Meat (or skinned sausages)
25g (1 oz) Butter (chilled)
½ Small White Onion
120g (1 cup) fresh breadcrumbs
2 tbsp fresh Sage (shredded) or 2 tsp dried sage, crumbled
Salt and freshly-ground black pepper
Method:
peel the onion, finely-grate half and thinly dice the remainder. Get your butter and chop it into small chunks. Combine all the ingredients in a mixing bowl and mix thoroughly with your hands.
Shape into small to medium-sized balls then transfer to your refrigerator and chill for at least 30 minutes so they firm up.
Transfer to your air-fryer basked and cook for 10 minutes at 180°C (360°F).
