Yes, you can make pancakes in an air fryer (sort of). These are really American style thick fluffy pancakes that are cooked in a cake tin or similar. So, though a pancake batter is used, they’re really cooked more like a cake (or a sweet Yorkshire pudding, if you will). You still get a delicious breakfast though!
Ingredients:
250g (2 cups) wheat flour
360ml (1½ cup) buttermilk
3½ tbsp butter, melted
1 large egg
4 tsp baking powder
½ tsp vanilla extract
½ tsp salt
Method:
Take a bowl and sift together the flour, salt, and baking powder.
Whisk together the eggs in a second bowl then add the buttermilk, vanilla extract, and the melted butter. Whisk all the wet ingredients thoroughly to combine.
Add the wet ingredients to the dry ingredients and beat them into a thick batter. Set the resultant batter aside to rest for 4 minutes.
In the meantime, pre-heat the Air Fryer to 190C (375℉) for 4 minutes with your cake barrel, cake tin or pizza pan inside.
Spray the cake barrel, cake tin or a pizza pan with cooking spray or add a little bit of butter and swirl to coat every surface.
Pour in the pancake batter, return to the Air Fryer and cook for 3 minutes then flip the pancake over and cook for another 2 minutes.
Take the pancake out of the Air Fryer and set aside to keep it warm. Repeat the cooking process until all batter is has been used up.
You can keep the pancakes warm in a low oven. Alternatively, a cheaper option would be to set a plate over a pan of boiling water. Sit the pancakes on the plate and cover with a lid.
