Ah Mè Thar Hin (Beef Curry)

Ingredients:

1.5kg beef, cut into 3cm cubes
250ml cooking oil
12 onions, thinly sliced
6 garlic cloves, chopped
4 caraway leaves
2 tbsp fish sauce
4 tbsp vinegar
2 tbsp curry powder
2 tsp hot chilli powder
1/2 tsp ground turmeric
2 tsp salt
2 tsp fresh ginger, finely chopped

Method:

Mix the beef with the salt, ground turmeric, fish sauce and vinegar. Toss to combine, cover and set aside to marinate for 20 minutes.

After this time, heat the oil in a pa, add the onions and fry until well coloured and crisp. Remove from the oil with a slotted spoon, then set aside.

Add the garlic, chilli powder and caraway leaves to the remaining oil and stir-fry for about 30 seconds or until fragrant. Add the beef and return the fried onions to the pan. Cover and cook for 10 minutes, then add 1.5l water. Continue cooking for about 50 minutes, or until the meat is tender.

Sprinkle over the curry powder and stir to combine. Take off the heat and serve immediately, accompanied by coconut rice or bean rice.

If desired, the curry can be finished by the addition of boiled baby new potatoes.
