Ingredients:

250g pork leg meat, cubed
1 tbsp ground cayenne pepper
2 dried yellow ají chillies, ground
vinegar
oil
salt

Method:

Mix together the cayenne pepper and ground ají chillies. Season to taste with salt then mix in enough vinegar to yield a smooth paste.

Add the pork fillets and toss to mix with the chilli sauce. Cover and set aside to marinate for 20 minutes.

Heat oil in a frying pan and add the pork mixture. Fry until the pork is cooked through and tender.

Either serve with cocktail sticks as a starter or accompany with boiled yucca and refried beans as a main course.
