Acar (Indonesian cucumber pickles) is a traditional Indonesian recipe for a classic quick pickle of carrot, cucumber, red onion and green chillies in a water and vinegar base with sugar and salt. Ingredients:
Carrots, peeled
Cucumber
red Onion
Green birds' eye chillies
Water
Salt, sugar and vinegar
red chillies, to garnish
Method:
No measurement here, the quantities and ratios are really up to personal preference. All you have to do is julienne the carrots into matchsticks, then place into a bowl.
Slice the cucumbers into rounds without peeling them then cut the outside of each round into 4 sticks, throwing away the middle part (seeds). Add to the bowl.
Quarter the onion and shred then add to the bowl with the other ingredients along with as many green chillies as you like.
Pour in water, salt, sugar and vinegar, stir to combine.
Adjust the flavour (balance of sweet, salty and sour), let stand in the fridge for at least 2 h or overnight.
This is often served to accompany nasi kuning as part of a larger meal.
